to make a jelley [jelly] for in a consumption
or trouble with a looseness
Take ye 4 feett [feet] of a calfe [calf] dress ym [them] clean
slitt ym [slit them] in ye [the] midst & take away ye [the] 
black vaines [veins] and the fatt [fat] & wash ym [them] 
cleane [clean] & put ym [them] in a buckett [bucket] of f___ water
and lett ym ly [let them lie] 24 hours in yt [that] time shift
ym [them] often then boile ym [boil them] in 2 gallons 
of clean water very softly alwayes [always] 
takeing of ye [taking off the] scum & fatt yt [fat that] rises & when
ye licquor [the liquor]is more then [than] 1/2 boiled away
put into itt [it] 1 pint & 1/2 o ye [the] best wine &
as it boileth [it boils] scum itt [it] clean & when ye [the] 
jelley [jelly] is boiled enugh [enough] you may kno [know]
for your fingers will cleane [clean] to ye spoone [the spoon]
then take itt [it] from ye [the] fire & take out all
ye [the] bones and flesh & when its almost cold beat
ye [the] whites of six egges [eggs] & put into itt & sett itt [it & set it]
on the fire again & lett it boile [let it boil] til it be clear
then sraine [strain] itt through a cloth into a bason [basin] & 
let it stand all night ye [the] next morn put it in a 
sallatt [salad] & put to it 1 pound of sugar 1/2 oz of cinimon [cinnamon]
broken 1 oz o nuttmeggs [nutmeg] 1 oz of ginger br____
& a good quantity o large mase [mace] boile ym [boil them] all together
till they taste as much of the spise [spice] as you desire & when
its almost cold take ye [the] whites of 6 eggs beat ym [them] & put into itt [it]
sett it on ye f___ when itt [it] ____ weild [wield] it in 1/2 a pint of white wine
then strain itt [it] through a jelley [jelly] bag and use itt [it] morne & night
